Curried Salmon Salad

that's right.  you heard me.  salmon. This girl saw some major strength gains (pull-ups!) this month after paying attention to my protein intake...

...and the return of some not-so-awesome symptoms because most of that protein was soy.

SO.  After some major thinking and some major encouragement from two amazing athletes/women that I admire... I'm back on the fish boat.

And the fish boat is good.

Curried Salmon Salad for One

  • 1 can Wild Caught Alaska Salmon (I like Bear + Wolf)
  • 1 T Dairy + Egg-Free Mayonnaise OR Fat-Free Plain Yogurt
  • 1/2 tsp Curry Powder
  • 1/2 Tbs Golden Raisins
  • 2 T Finely Minced Red Bell Pepper
  • 1 tsp Finely Minced Sweet Onion

Stir it all up and serve it on dino kale leaves, raw flatbreads, or sprouted grain toast with lots of spinach!
