Stumbled across "Baking 'n' Books" a few months ago and loved it! What better combination!? For a gal who eats primarily vegan - this book looks amazing and I can't wait to try it. Meat eater or not... be adventurous and read on!
I always say that I love cooking and baking….but, more so, I love eating the end product . In fact, I tend to do alot more of the former versus the latter. Somehow, I never seem to have the time between work and life or lack the required energy (a.k.a procrastinating?).
Anyhow, I do love finding new recipes and cooking/baking books for inspiration. I am indeed a self-proclaimed “Every-Thing-Arian” - or flexatarian you could say - meaning that I eat most foods and am don’t follow a specific ‘diet lifestyle’! I am not a vegetarian, vegan, carnivore, omnivore, herbivore, gluten-free, wheat-free, raw, macrobiotic, or whatever else you would like to include here!
But, I do enjoy trying/seeking out a variety of foods. So with that said (and made clear!), I recently recieved the recipe-book The 30 Minute Vegan by Mark Reinfeld and Jennifer Murray, with over 175 Quick, Delicious, and Healthy Recipes for Everyday Cooking (check out www.veganfusion.com for more information).
I have had the opportunity to only try out a few recipes so far – in the Desserts section naturally(!). But I am pleasantly happy with it, and look forward to experimenting with it further (y’know, when that time and energy thing becomes available ). The book is broke down into Morning Meals, Snacks/Kids, Lunches, Salads, Soups, Side Dishes/Appetizers, Dinners, Comfort Food, Desserts, Condiments/Oils/Spreads, and Party Picks. It is well laid-out and easy to follow.
Overall, I feel that Ellie Krieger, author and host on the Food Network, summarized it well with her comment of “You’ll love it (this book) whether you’re a vegan, or you just want to eat like one once in a while.”
So, let’s get down to it shall we? I baked the Peanut Butter Balls from the book. I don’t think I can type out the recipe here due to copyright, no??!! But they are to die for!! Oh my! I actually did not use peanut butter, rather Almond Butter because I had an extra jar that I could use instead.
You can roll these desserts into “Balls” or press them down more for a traditional cookie shape by flattening the balls alittle. I took that route. Their book description says it best and, oh so true, “the outsides are crisp while the middles are moist” of pure decadent deliciousness. Just to give you an idea, besides almond butter, there is pure maple syrup, oats and chocolate-chips in these babies
Chewy, soft, and oh-so moist! = Love.
