Hummus and Quinoa Kale Wraps

I was visiting my sister last month and hit up the gym for a quick workout while she was at work. Walking home, I stumbled upon Chakra 4 Herb and Tea House, which had just opened an Organic Raw/Vegan Cafe.

I was on the hunt for protein and ordered their hummus wrap on kale leaves instead of a tortilla and a side of quinoa pilaf.

I haven't stopped thinking about it since.

My version!

Hummus and Quinoa Kale Wraps

Hummus

In a blender or food processor, puree:

  • 1 can chickpeas or cannelini beans
  • 1 Tbs tahini
  • 2 cloves garlic
  • 1 tsp cumin
  • 2-3 Tbs lemon juice
  • 1/4 tsp sea salt

Quinoa Pilaf

In a rice cooker or pan, make quinoa according to package, then stir in remaining ingredients.

  • 1 cup cooked quinoa
  • 1 Tbs olive oil
  • 2 Tbs lemon juice
  • 1/4 tsp sea salt
  • (optional: 1/4 c chickpeas, 1/8 c pepitas or 1/8 c sunflower seeds)

Wrap It up

  • 1 carrot
  • 1 red bell pepper
  • 1/2 c quinoa pilaf
  • 1/2 c hummus
  • 5 Tuscan Kale Leaves - Don't get curly kale if they don't have tuscan... substitute collards or chard.  I tried curly kale wraps once and ended up with more on the floor than in my face.

1. Cut your bell peppers and carrots into matchsticks and toss with your favorite organic dressing (or a little olive oil/vinegar action)

2. Load up your plate:  A little ramekin of hummus, a pile of quinoa, a pile of veggies and a mountain of kale.

3. Get wrapping:   Smear some hummus on the leaf as "glue," add veggies for crunch and top with quinoa.  Roll it up and enjoy!

This actually makes a great work lunch as you can take small containers of  your quinoa and hummus and ziploc baggies with your chopped veggies (sans dressing) and kale!
