Lo and Behold: An accidental kitchen miracle.
5 Minute Pumpkin Curry - Serves 1
no photos as hunger won out over photography... picture a giant bowl of creamy, spicy orange goodness.
1/2 c Canned Chickpeas, Drained and Rinsed
(or 1/2 c cooked shrimp... or chicken... or pretty much whatever protein is in your fridge from last night)
1/3 c Canned Pumpkin
1/4 c Soy or Low Fat Milk
1/2-1 Tablespoon Curry Powder (depends on the potency of your curry - start small, you can always add)
Dumping Of the Tupperware
1. In a skillet, stir the pumpkin, milk and curry powder. Add more/less milk to adjust the thickness.
2. Dump! Throw in your protein, plus whatever chopped veggies strikes your fancy. Carrots and potatoes would be especially good in this.
3. Heat through and serve with brown rice, quinoa, steamed greens, naan... whatever!
